Food is one of the primary facets that connects people across the world. This includes friends, family, associates, and even plain old acquaintances. In Mexico, food is a love language and an integral aspect of the culture that is now being adopted in different nations, with more and more people appreciating Mexican food and the atmosphere our restaurants provide. Love, laughter, family, kindness, unity, and community are all crucial aspects of our culture, and of course, our food culture. These are a few core emotions evoked by Mexican food that Saul and Colby pride themselves on.
Los Aguacateros is a proudly Mexican establishment and brand first started in August 2020 by Saul and Colby. They are friends who became brothers, connected by family values of hard work, dedication, and a “can do” attitude.
The environments we come from, what we are exposed to and what we witness daily has significant influences on how we turn out, including the decisions and paths we take in the long run. With Saul and Colby, avocado is the central theme that brought them together. It’s funny, isn’t it? Well, this is how it happened.
Saul’s mother worked in local convenience store kitchens and cooked for numerous migrants who would swarm in and out of these locations during their break from working in the fields. Saul’s parents are from Tacamboro, Michoacan, a town known to cultivate and export over 75% of the avocados across the globe to various cities.
On the other hand, Saul’s father worked as a packer and transporter of avocados to different cities before migrating to the United States of America with his family after the recession hit the country, devaluing the Mexican currency tremendously.
After migrating to the U.S., the family worked in the fields, a norm for many migrants. They cultivated onion, soybean and tobacco fields. During this time, Saul’s mother fell in love with cooking and proved to her family and friends that she had quite the hand with the pots and pans. The family as a whole was somehow always involved in the food industry.
Collectively, they’ve held a few positions in the restaurant industry to make an income and sustain themselves by waiting tables, cleaning floors, cooking in the kitchens, taking orders, and serving as managers. However, from this, a passion was sparked in Saul to continue the legacy by venturing full-time into the industry, as food is all he has ever known.
Some things are just destined to happen. Nothing occurs by chance. This is indeed the case with Saul and Colby, who first met when Saul worked at a restaurant as a waiter. They later crossed paths once more when he began working at Glenville Electric Motors, a company Colby worked at as an engineer and engineering student at Georgia Southern University. A coincidence? Perhaps.
This exact coincidence led to an engineer with no history in the restaurant business meeting a migrant who would later become his business partner, steering him into a completely different and unexpected path of food, community and love.
Our Food
The image and inspiration for our business and image originate from our roots, our forefathers who worked in the avocado orchards and those who packed and transported this simple fruit. These jobs that may seem insignificant to others, yet to us? They have sustained us and made us who we are.
We proudly serve authentic Michoacan flavors, with Al Pastor from the trompo as our specialty. All recipes, from the salsa to the Al Pastor and even our tortillas, are passed down from multiple generations and remain a family trade secret. It is our hope that someday, we can pass these down to our descendants as well. Al Pastor is a traditional Mexican dish made with seasoned and marinated pork. The name translates to “Shephard Style,” which comes from the origin of the cooking method.
Our tortillas are fresh and handmade. We only use quality cuts of meat and other essential ingredients. Everything is made with a heaping tablespoon of love, and a “can do” attitude where we thrive on the happiness of others. Quality, simply put, is a standard we do not compromise on. We do not take shortcuts in producing the best possible product, and serving fantastic food.

All aspects of the business, from sourcing the ingredients used to the finished plate, are filled with passion for our work and customers to deliver the best possible product and service standard. Our first location is where it all began in Glenville. We aim to leave an unforgettable lasting impression on our community by serving excellent food and hosting select charities throughout the years as a way of giving back, displaying gratitude and returning the support we are given.
